The Kjeldahl method involves converting nitrogen-containing organic compounds into inorganic nitrogen in the form of ammonium sulfate for detection. The measured nitrogen content is then multiplied by a specific conversion factor to determine the protein content. This method is designated as the current national standard for protein content determination in foods and is also an internationally accepted assay method. The KN680 Kjeldahl Nitrogen Analyzer is a fully automated nitrogen distillation system designed based on the principles of the Kjeldahl method, and it can be used for the determination of nitrogen or protein content.
